Mustard-Braised Fish with Potatoes

Ingredients
- 12 oz cod fillets
- 3 tbsp mustard paste
- 1/4 cup plain yogurt
- 1 medium yellow onion
- 2 cloves garlic
- 1 tbsp fresh ginger
- 2 medium potato
- 1 medium tomato
- 2 tbsp vegetable oil
- 1/4 tsp turmeric powder
- 1/2 tsp salt
- 1/4 cup water
Instructions
- Step 1: Heat 2 tbsp vegetable oil in a large skillet over medium heat. Add 1 medium chopped yellow onion and cook for 5 minutes until golden brown, stirring occasionally.
- Step 2: Add 2 minced garlic cloves and 1 tbsp grated fresh ginger, cooking for 1 minute until fragrant.
- Step 3: Stir in 3 tbsp mustard paste and 1/4 cup plain yogurt, then add 1/4 tsp turmeric powder and 1/2 tsp salt. Cook for 2 minutes, stirring constantly to prevent burning.
- Step 4: Add 12 oz cod fillets and 1 cup diced potato cubes, then add 1 medium diced tomato and 1/4 cup water. Bring to a gentle simmer.
- Step 5: Cover the skillet and cook for 15-18 minutes, or until potatoes are tender and fish is cooked through, stirring occasionally.
- Step 6: Sprinkle with 2 tbsp chopped fresh cilantro and serve hot.
