One-Pan Cheesy Veggie Pasta with Cherry Tomatoes

Ingredients
- 8 oz penne pasta
- 1 cup, halved cherry tomatoes
- 2 cups, fresh spinach
- 1/2 cup, shredded mozzarella
- 2 tbsp olive oil
- 2 cloves, minced garlic
- 1/2 tsp dried oregano
- 1/4 tsp salt
- 1/4 tsp red pepper flakes
Instructions
- Step 1: Bring a large pot of salted water to a boil. Cook 8 oz penne for 8-10 minutes until al dente. Reserve 1/2 cup pasta water, then drain.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 2 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing 1 minute until fragrant.
- Step 3: Add 1 cup halved cherry tomatoes and 2 cups fresh spinach. Cook 3 minutes until tomatoes soften. Stir in drained penne, 1/2 cup reserved pasta water, 1/2 tsp dried oregano, and 1/4 tsp salt.
- Step 4: Add 1/2 cup shredded mozzarella and toss until cheese melts and sauce coats pasta (about 2 minutes). Serve immediately.
