One-Pan Lemon Garlic Pasta with White Beans

Ingredients
- 8 ounces spaghetti
- 15 ounces, drained and rinsed cannellini beans
- 4, minced garlic cloves
- 1, zest and juice lemon
- 3 tablespoons olive oil
- 1/4 teaspoon red pepper flakes
- 1/4 cup, chopped fresh parsley
- 1/2 cup pasta water
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 8 ounces spaghetti and cook for 8-10 minutes until al dente. Reserve 1/2 cup pasta water, then drain spaghetti.
- Step 2: Heat 3 tablespoons olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and 1/4 teaspoon red pepper flakes, cooking for 1 minute until fragrant, being careful not to brown garlic.
- Step 3: Add drained cannellini beans, 1 tablespoon lemon zest, and 2 tablespoons lemon juice to skillet. Stir to combine and heat through for 2 minutes.
- Step 4: Add drained spaghetti to skillet, then add 1/2 cup reserved pasta water. Toss vigorously for 2 minutes until sauce thickens and coats pasta. Season with salt and pepper to taste.
- Step 5: Remove from heat and stir in 1/4 cup chopped fresh parsley. Serve immediately.
