One-Pan Lemon Garlic Shrimp Pasta with Spinach

Ingredients
- 12 oz spaghetti
- 3 tbsp extra virgin olive oil
- 4 cloves, minced garlic
- 1, zest and juice lemon
- 12 oz, peeled and deveined shrimp
- 4 oz fresh spinach
- 1/4 tsp red pepper flakes
- 1 tsp kosher salt
- 2 tbsp, chopped fresh parsley
Instructions
- Step 1: Bring 4 quarts of salted water to a boil in a large pot. Add 12 oz spaghetti and cook for 8-10 minutes until al dente, reserving 1 cup pasta water before draining.
- Step 2: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing for 1 minute until fragrant but not browned.
- Step 3: Add 12 oz shrimp to the skillet, cooking for 2 minutes per side until pink and opaque. Stir in 1 lemon zest and 2 tbsp lemon juice, then add drained spaghetti and 1/2 cup reserved pasta water.
- Step 4: Toss to coat, then add 4 oz fresh spinach and cook for 1 minute until wilted. Season with 1 tsp kosher salt and stir in 2 tbsp chopped parsley until combined.
