One-Pan Sausage and Kale with White Beans

Ingredients
- 12 oz Italian sausage
- 1 bunch kale
- 1 can (15 oz) white beans
- 3 cloves garlic
- 2 tbsp olive oil
- 1 can (14 oz) diced tomatoes
- 1 tsp dried oregano
- 1/4 tsp red pepper flakes
- 1/2 cup vegetable broth
- 1/2 tsp salt
Instructions
- Step 1: Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat. Add 12 oz sliced Italian sausage and cook for 5 minutes, breaking it into small pieces, until browned and cooked through.
- Step 2: Add 3 minced garlic cloves and 1/4 tsp red pepper flakes, stirring for 1 minute until fragrant and golden. Add 1 bunch chopped kale (stems removed), 1 can diced tomatoes, 1/2 tsp dried oregano, and 1/2 cup vegetable broth. Stir to combine and bring to a simmer.
- Step 3: Add 1 can drained white beans and 1/2 tsp salt. Reduce heat to low, cover, and simmer for 10 minutes until kale is tender and flavors meld.
- Step 4: Remove lid, increase heat to medium, and simmer uncovered for 3 minutes to thicken the sauce slightly. Adjust seasoning with salt if needed before serving.
