Instructions
- Step 1: Rub 6 bone-in chicken thighs evenly with 3 tbsp jerk seasoning. Heat 2 tbsp olive oil in a large heavy-bottomed pot over medium-high heat. Add chicken thighs skin side down and sear for 4-5 minutes until skin is browned and crisp, then flip and sear the other side for 3 minutes. Remove chicken and set aside.
- Step 2: In the same pot, add 1 medium diced yellow onion and 1 medium diced red bell pepper. Sauté over medium heat for 5 minutes until softened and fragrant.
- Step 3: Stir in 1 1/2 cups long grain white rice and toast for 2 minutes, coating the grains in the onion and pepper mixture. Pour in 3 cups chicken broth, 1 tsp salt, and 1/2 tsp black pepper, stirring to combine.
- Step 4: Nestle the seared chicken thighs back into the pot on top of the rice. Bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes until rice is tender and chicken is cooked through.
- Step 5: Remove from heat and let rest covered for 5 minutes. Fluff the rice with a fork and garnish with 3 chopped scallions before serving.
