One-Pot Cumin-Spiced Lentil Stew

Ingredients
- 1 cup dried brown lentils
- 4 cups vegetable broth
- 1 large, diced onion
- 2, diced carrots
- 2 stalks, diced celery
- 2 cloves, minced garlic
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1 bay leaf
- 1 tbsp olive oil
- 2 cups, chopped kale
- 1/2 tsp salt
Instructions
- Step 1: Heat 1 tbsp olive oil in a large pot over medium heat. Add 1 cup diced onion and cook for 5 minutes until softened and translucent.
- Step 2: Add 1 cup diced carrots, 1 cup diced celery, and 2 minced garlic cloves, and cook for 3 minutes until fragrant.
- Step 3: Stir in 1 tsp ground cumin, 1/2 tsp smoked paprika, 1 cup rinsed lentils, 4 cups vegetable broth, 1 bay leaf, 1/2 tsp salt, and 1/4 tsp black pepper. Bring to a boil.
- Step 4: Reduce heat to low, cover, and simmer for 25-30 minutes until lentils are tender and vegetables are cooked through.
- Step 5: Discard the bay leaf, stir in 2 cups chopped kale, and cook for 3 minutes until wilted.
