One-Pot Garlic Lemon Pasta

Ingredients
- 8 oz spaghetti
- 3 tbsp olive oil
- 4 cloves garlic
- 1/4 tsp red pepper flakes
- 1/4 cup lemon juice
- 1/2 cup Parmesan cheese
- to taste salt
- to taste black pepper
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/4 cup pasta water.
- Step 2: While the pasta cooks, heat 3 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing for 1 minute until fragrant — do not let garlic brown.
- Step 3: Add the drained spaghetti to the skillet with 1/4 cup reserved pasta water and 1/2 cup grated Parmesan cheese. Toss vigorously for 1 minute until cheese melts and sauce coats pasta. Stir in 1/4 cup lemon juice, then season with salt and black pepper to taste.
