One-Pot Lemon Zest Pasta

Ingredients
- 12 oz spaghetti
- 3 tbsp olive oil
- 4 cloves, minced garlic
- 1/2 cup vegetable broth
- 2 tbsp lemon zest
- 1/4 cup, grated Parmesan cheese
- 1/4 cup, chopped fresh parsley
- to taste salt
- to taste black pepper
Instructions
- Step 1: Bring 4 quarts of salted water to a rolling boil in a large pot. Add 12 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and cook for 1 minute until fragrant, avoiding browning.
- Step 3: Add drained spaghetti, 1/2 cup reserved pasta water, 1/2 cup vegetable broth, and 2 tbsp lemon zest to the skillet. Toss for 2 minutes until sauce thickens slightly, adding more pasta water if needed.
- Step 4: Remove from heat, stir in 1/4 cup grated Parmesan cheese and 1/4 cup chopped parsley. Season with salt and pepper to taste, then serve immediately.
