One-Pot Pasta with Chicken and Spinach

Ingredients
- 8 oz spaghetti
- 1 lb boneless skinless chicken thighs
- 1 tbsp olive oil
- 3 cloves garlic
- 1/2 cup chicken broth
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
- to taste salt
- to taste black pepper
Instructions
- Step 1: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Season 1 lb boneless skinless chicken thighs (cut into 1-inch cubes) with salt and pepper, then add to the skillet and cook for 5-6 minutes until golden brown and cooked through, then remove and set aside.
- Step 2: Add 3 cloves garlic (minced) to the skillet and cook for 30 seconds until fragrant, then add 1/2 cup chicken broth and bring to a simmer.
- Step 3: Add 8 oz spaghetti to the skillet, stirring to combine with the broth, and cook for 8-10 minutes, stirring occasionally, until spaghetti is tender and liquid is absorbed.
- Step 4: Stir in 1 lb cooked chicken, 2 cups fresh spinach, and 1/4 cup grated Parmesan cheese. Cook for 1 minute until spinach wilts and cheese melts.
