One-Pot Pasta with Garlic Parmesan and Spinach

Ingredients
- 8 oz Pasta
- 2 tbsp Olive oil
- 4 cloves Garlic
- 2 cups Spinach
- 1/2 cup Parmesan cheese
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1/2 cup Pasta water
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil (add 1/2 tsp salt). Add 8 oz spaghetti and cook for 8-10 minutes until al dente, reserving 1/2 cup pasta water before draining.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and cook for 1 minute until fragrant, stirring constantly to prevent burning.
- Step 3: Add drained spaghetti to skillet with 2 cups fresh spinach, 1/2 cup reserved pasta water, 1/2 cup grated Parmesan cheese, and 1/4 tsp black pepper. Toss for 2 minutes until cheese melts and spinach wilts, adding more pasta water if sauce is too thick.
