One-Pot Penne with Cherry Tomatoes and Basil

Ingredients
- 12 oz penne pasta
- 2 tbsp olive oil
- 3 cloves, minced garlic
- 1 cup, halved cherry tomatoes
- 1/4 cup, chopped fresh basil
- 1/2 cup, grated Parmesan cheese
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 cup, reserved pasta water
Instructions
- Step 1: Bring 4 quarts of water to a rolling boil in a large pot. Add 1 tsp salt and 12 oz penne pasta, and cook for 8 minutes until al dente. Reserve 1/4 cup pasta water, then drain the pasta and set aside.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and cook for 1 minute until fragrant, stirring constantly to prevent browning.
- Step 3: Add 1 cup halved cherry tomatoes to the skillet and cook for 3 minutes until they begin to soften and release juices.
- Step 4: Add the drained penne to the skillet, along with 1/4 cup reserved pasta water and 1/4 cup chopped fresh basil. Toss vigorously for 2 minutes until the sauce thickens and coats every strand of pasta.
- Step 5: Stir in 1/2 cup grated Parmesan cheese and season with 1/4 tsp black pepper. Serve immediately while hot.
