One-Pot Tomato and Sausage Pasta with Garlic Bread

  1. Step 1: Heat 1 tbsp olive oil in a large pot over medium heat. Add 1/2 lb Italian sausage and cook for 6-8 minutes until browned and cooked through, breaking into small pieces with a spoon.
  2. Step 2: Add 1 medium diced onion and 3 minced garlic cloves to the pot and cook for 3-4 minutes until onion is translucent and fragrant.
  3. Step 3: Stir in 1 can crushed tomatoes, 1/2 cup vegetable broth, 1 tsp dried oregano, and 1/2 tsp red pepper flakes. Bring to a simmer and cook for 10 minutes.
  4. Step 4: Add 8 oz penne pasta to the pot, stirring to submerge. Cook for 12-15 minutes, stirring occasionally, until pasta is al dente and sauce thickens.
  5. Step 5: Stir in 1/4 cup grated Parmesan cheese and 1/4 cup chopped fresh basil. Toast 2 baguette slices (cut into 1/2-inch pieces) in a 375°F oven for 5 minutes until golden. Serve pasta with garlic bread.
