One-Pot Tomato Basil Chicken

Ingredients
- 4 boneless, skinless, about 1.5 lbs chicken breasts
- 2 tbsp olive oil
- 1 medium, diced onion
- 2 cloves, minced garlic
- 1 can (28 oz) crushed tomatoes
- 1/2 cup chicken broth
- 1/4 cup, chopped fresh basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 2 tbsp olive oil in a large pot over medium-high heat. Season 4 boneless, skinless chicken breasts with 1/2 tsp salt and 1/4 tsp black pepper, then add to the pot and cook for 4-5 minutes per side until golden brown.
- Step 2: Add 1 diced medium onion and 2 minced garlic cloves to the pot, sautéing for 2-3 minutes until softened and fragrant.
- Step 3: Pour in 1 can (28 oz) crushed tomatoes and 1/2 cup chicken broth, then add 1/4 cup fresh basil and 1 tsp dried oregano. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Step 4: Return chicken to the pot, cover, and simmer for 15-20 minutes until chicken is cooked through and sauce has thickened slightly, stirring once halfway.
