Instructions
- Step 1: Score the skin of 2 duck breasts in a crosshatch pattern without cutting into the meat. Season both sides with 1 tsp salt and 1/2 tsp black pepper.
- Step 2: Place the duck breasts skin-side down in a cold skillet, then turn the heat to medium. Cook for 8-10 minutes until the skin is crispy and golden brown, rendering out the fat. Flip and cook the other side for 4-5 minutes for medium rare.
- Step 3: Remove the duck breasts from the pan and let rest on a cutting board tented with foil for 5 minutes.
- Step 4: Pour off excess duck fat from the pan, then add 3 tbsp maple syrup and 1/2 cup apple cider to the pan over medium heat. Stir and cook until the sauce reduces by half and thickens to coat the back of a spoon, about 4-5 minutes.
- Step 5: Remove from heat and whisk in 1 tbsp unsalted butter and 2 fresh thyme sprigs for aroma.
- Step 6: Slice the duck breasts thinly and drizzle the maple-cider reduction over top before serving.
