Paprika-Spiced White Bean Pasta with Spinach

Ingredients
- 8 oz pasta
- 1 can cannellini beans
- 2 tbsp olive oil
- 3 garlic cloves
- 2 cups fresh spinach
- 1 tsp paprika
- 1/4 tsp red pepper flakes
- 1/2 tsp salt
- 1/2 cup pasta water
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz pasta and cook for 8-10 minutes until al dente. Reserve 1/2 cup pasta water before draining.
- Step 2: While pasta cooks, drain and rinse beans. Heat 2 tbsp olive oil in a skillet over medium heat. Add minced garlic and cook for 1 minute until fragrant but not browned.
- Step 3: Stir in beans, paprika, red pepper flakes, and 1/2 tsp salt. Add spinach and cook for 2 minutes until wilted. Toss in drained pasta and 1/2 cup reserved pasta water, stirring until sauce coats pasta and thickens.
