Instructions
- Step 1: Place the beef cubes in a pot with 2 cups of the stock, half the garlic, half the ginger and 1/2 tsp salt. Simmer covered for 45 minutes until nearly tender. Drain and reserve the cooking liquid.
- Step 2: Heat the oil in a heavy pot over medium heat. Add the cumin seeds, cardamom, cloves, cinnamon and peppercorns and toast for 1 minute until fragrant.
- Step 3: Add the onions and cook for 12-15 minutes, stirring often, until deep golden brown. This gives pilau its color.
- Step 4: Stir in the remaining garlic and ginger and cook for 1 minute. Add the beef and the pilau masala and fry for 3 minutes to coat the meat.
- Step 5: Add the tomatoes and cook until they break down, about 4 minutes. Add the potatoes.
- Step 6: Drain the rice and fold it in gently. Measure the reserved cooking liquid plus the remaining stock to make 3.5 cups total, pour it in, and add the remaining salt.
- Step 7: Bring to a boil, then reduce the heat to the lowest setting. Cover tightly and cook for 20 minutes without lifting the lid.
- Step 8: Rest off the heat for 10 minutes, fluff with a fork, garnish with cilantro and serve.
