Pork Ginger Meatball Soup

Ingredients
- 1 pound ground pork
- 2 tablespoons, grated ginger
- 2 cloves, minced garlic
- 1/4 cup, chopped green onions
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 4 cups chicken broth
- 4 ounces rice noodles
- 2 cups, chopped bok choy
Instructions
- Step 1: In a bowl, combine 1 pound ground pork, 2 tablespoons grated ginger, 2 minced garlic cloves, 1/4 cup chopped green onions, 2 tablespoons soy sauce, and 1 tablespoon sesame oil. Mix with your hands until well combined, then form into 1-inch meatballs.
- Step 2: In a large pot, bring 4 cups chicken broth to a simmer over medium heat. Add the meatballs and cook for 8-10 minutes until cooked through and the broth is heated through.
- Step 3: Add 4 ounces rice noodles and 2 cups chopped bok choy to the pot. Simmer for 5 minutes until the noodles are tender and the bok choy is wilted.
- Step 4: Season with salt and pepper to taste, then serve hot.
