Route Planner Pasta with Lemon-Pepper Shrimp

Ingredients
- 8 oz spaghetti
- 3 tbsp extra-virgin olive oil
- 4 cloves, minced garlic
- 12 oz, peeled and deveined shrimp
- 1, zested and juiced lemon
- 1 tsp freshly ground pepper
- 2 tbsp, chopped chives
- 1/2 tsp salt
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 3 tbsp extra-virgin olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and cook for 1 minute until fragrant but not browned.
- Step 3: Add 12 oz shrimp to the skillet, sprinkle with 1 tsp freshly ground pepper and 1/2 tsp salt, and cook for 2-3 minutes per side until pink and opaque.
- Step 4: Stir in 1/2 cup reserved pasta water, 1 lemon's worth of juice, and the zest, tossing to coat the shrimp. Add drained spaghetti and toss vigorously for 1 minute until sauce clings to strands.
- Step 5: Remove from heat and stir in 2 tbsp chopped chives. Serve immediately.
