Saffron-Infused Tomato Basil Soup
Velvety tomato soup with delicate saffron notes, finished with fresh basil and cream.

Ingredients
- 2 lbs tomatoes
- 1/4 tsp saffron threads
- 1/2 cup heavy cream
- 1/4 cup fresh basil
- 1 onion
- 2 cloves garlic
- 2 tbsp olive oil
- 2 cups vegetable broth
Instructions
- Step 1: Heat olive oil in a large pot over medium heat. Sauté diced onion and minced garlic until soft (about 5 minutes), stirring occasionally.
- Step 2: Add chopped tomatoes, broth, and 1/4 cup water. Bring to a simmer and cook uncovered for 15 minutes until tomatoes break down.
- Step 3: Place 1.5 cups of tomato mixture in a blender with saffron threads, then blend until smooth. Return to pot.
- Step 4: Stir in remaining tomato mixture, simmer for 5 minutes, then stir in 1/2 cup heavy cream until warmed through (do not boil).
- Step 5: Stir in 1/4 cup chopped basil, then ladle into bowls. Garnish with extra basil and a swirl of cream.
