Saffron Lemon Tagliatelle
Tender tagliatelle tossed in a fragrant saffron-infused lemon cream sauce with fresh herbs and a hint of garlic.

Ingredients
- 12 oz tagliatelle
- 3 tbsp olive oil
- 4 cloves, minced garlic
- 1/4 tsp saffron threads
- 1/2 cup heavy cream
- zest and juice of 1 lemon
- 1/4 cup, chopped parsley
- 1/4 cup, grated Parmesan cheese
- to taste salt
- to taste pepper
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 12 oz tagliatelle and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and sauté for 1 minute until fragrant but not browned.
- Step 3: Add 1/4 tsp saffron threads to the skillet and stir for 30 seconds, then pour in 1/2 cup heavy cream and 1/4 cup reserved pasta water. Simmer for 2 minutes until thickened.
- Step 4: Stir in lemon zest, lemon juice, 1/4 cup chopped parsley, and 1/4 cup grated Parmesan. Add the drained tagliatelle and toss for 1-2 minutes until coated. Add more reserved pasta water if needed to achieve a glossy consistency.
- Step 5: Season with salt and pepper to taste. Serve immediately while hot.
