Saffron-Scented Basmati Rice with Toasted Almonds

Ingredients
- 1 cup basmati rice
- 1/4 tsp saffron threads
- 2 cups water
- 2 tbsp unsalted butter
- 3 tbsp, sliced almonds
- 1 tsp lemon zest
Instructions
- Step 1: Place saffron threads in a small bowl and pour 1 tbsp warm water over them; let steep for 10 minutes.
- Step 2: Rinse rice under cold water until water runs clear, then combine with water in a medium pot.
- Step 3: Bring to a rolling boil over high heat, cover tightly, reduce heat to low, and simmer for 18 minutes until water is absorbed.
- Step 4: Remove from heat; let rice rest, covered, for 10 minutes.
- Step 5: While rice cooks, melt butter in a small skillet over medium heat. Add sliced almonds and toast for 2-3 minutes until golden, stirring constantly.
- Step 6: Fluff cooked rice with a fork, add saffron water and lemon zest, then gently fold in toasted almonds.
