  1. Step 1: Bring a large pot of salted water to a boil. Add 12 oz spaghetti and cook for 8-10 minutes until al dente, reserving 1/2 cup pasta water before draining.
  2. Step 2: While pasta cooks, heat 3 tbsp olive oil in a large skillet over medium heat. Add minced shallot and garlic, sautéing for 2 minutes until fragrant but not browned.
  3. Step 3: Add diced tomatoes (with juice), saffron threads, 1 tsp salt, and 1/4 tsp red pepper flakes. Simmer uncovered for 15 minutes, stirring occasionally until sauce thickens slightly.
  4. Step 4: Add drained spaghetti to the skillet along with 1/2 cup reserved pasta water. Toss vigorously for 2 minutes until sauce coats pasta. Stir in 1/2 cup torn fresh basil and serve immediately.
