Sage and Garlic Spaghetti with White Wine

Ingredients
- 12 oz spaghetti
- 3 tbsp olive oil
- 4 cloves, minced garlic
- 1/2 cup dry white wine
- 1/4 cup, grated Parmesan cheese
- 2 tbsp, chopped fresh sage
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Bring 4 quarts of salted water to a rolling boil in a large pot. Add 12 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and 2 tbsp fresh sage, sautéing for 1 minute until fragrant but not browned.
- Step 3: Pour in 1/2 cup dry white wine, increase heat to medium-high, and cook for 3-4 minutes until reduced by half, scraping up any browned bits from the pan.
- Step 4: Add drained spaghetti to the skillet along with 1/4 cup reserved pasta water and 1/4 cup grated Parmesan. Toss vigorously for 2 minutes until sauce coats every strand, adding more pasta water if needed to reach desired consistency.
