Sautéed Mushroom and Herb Pasta
A quick, elegant pasta dish with earthy mushrooms and fresh herbs in a light, herb-infused sauce.

Ingredients
- 12 oz spaghetti
- 2 tbsp olive oil
- 1 small, finely chopped onion
- 8 oz, sliced cremini mushrooms
- 2 cloves, minced garlic
- 1/4 cup white wine
- 2 tbsp, chopped fresh parsley
- 1 tbsp, leaves fresh thyme
- to taste salt
- to taste pepper
- 1/4 cup, grated Parmesan cheese
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 12 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 1 small finely chopped onion and cook for 3 minutes until softened. Add 8 oz sliced cremini mushrooms and cook for 5 minutes until golden and tender.
- Step 3: Add 2 minced garlic cloves, 1 tbsp fresh thyme leaves, and 1/4 cup white wine to the skillet. Cook for 2 minutes until wine has reduced by half and mixture is fragrant.
- Step 4: Add drained spaghetti to the skillet along with 2 tbsp reserved pasta water. Toss to coat and cook for 1 minute until sauce has thickened and coats the strands.
- Step 5: Season with salt and pepper to taste. Stir in 2 tbsp fresh parsley and 1/4 cup grated Parmesan cheese. Serve immediately.
