Sheet Pan Lemon-Glazed Chicken with Potatoes

Ingredients
- 1.5 lbs boneless chicken thighs
- 1 lb baby potatoes
- 1 lemon
- 3 tbsp extra virgin olive oil
- 4 garlic cloves
- 1 tsp dried thyme
- 1/2 tsp kosher salt
- 1/4 tsp freshly ground black pepper
Instructions
- Step 1: Preheat oven to 400°F. Cut 1 lemon into 8 wedges and set aside. Thinly slice 4 garlic cloves.
- Step 2: Toss 1 lb baby potatoes (halved if large) with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper on a parchment-lined sheet pan. Arrange in a single layer.
- Step 3: Place 1.5 lbs boneless chicken thighs on top of potatoes. Drizzle with remaining 1 tbsp olive oil, then sprinkle with 1 tsp dried thyme and 2 garlic slices. Add lemon wedges on top.
- Step 4: Roast for 25 minutes until chicken reaches 165°F internally and potatoes are golden and tender when pierced with a fork.
