- 1 lb asparagus
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 1, zested and juiced lemon
- 2 tbsp, finely chopped fresh dill
- 2 cloves, minced garlic
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F. Place cod fillets on a parchment-lined baking sheet. Toss asparagus with 1 tbsp olive oil, 1/4 tsp salt, and 1/8 tsp pepper; arrange around cod.
- Step 2: Whisk together remaining 1 tbsp olive oil, Dijon mustard, lemon zest, lemon juice, garlic, 1/4 tsp salt, and 1/8 tsp pepper in a small bowl. Drizzle evenly over cod and asparagus.
- Step 3: Roast for 12-15 minutes until cod is opaque and flakes easily with a fork, and asparagus is tender-crisp. Sprinkle with fresh dill before serving.
