Sheet Pan Sausage and Bell Pepper Medley

- 12 ounces Italian sausage links
- 2 large (1 red, 1 yellow) bell peppers
- 1 medium yellow onion
- 3 garlic cloves
- 1/2 cup red wine
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Step 1: Preheat oven to 400°F. Place 12 ounces Italian sausage links in a single layer on a parchment-lined sheet pan.
- Step 2: Slice 2 large bell peppers (1 red, 1 yellow) into 1/2-inch strips and add to the sheet pan with 1 medium sliced yellow onion and 3 minced garlic cloves. Drizzle with 1 tablespoon olive oil and toss to coat.
- Step 3: Roast for 20 minutes until peppers are tender-crisp, then remove sausage. Return sausage to pan, add 1/2 cup red wine and 1/2 teaspoon dried oregano, and season with 1/4 teaspoon kosher salt and 1/4 teaspoon black pepper. Return to oven for 5 minutes until wine reduces slightly and coats the vegetables.
