  1. Step 1: Preheat oven to 400°F. Place 12 ounces Italian sausage links in a single layer on a parchment-lined sheet pan.
  2. Step 2: Slice 2 large bell peppers (1 red, 1 yellow) into 1/2-inch strips and add to the sheet pan with 1 medium sliced yellow onion and 3 minced garlic cloves. Drizzle with 1 tablespoon olive oil and toss to coat.
  3. Step 3: Roast for 20 minutes until peppers are tender-crisp, then remove sausage. Return sausage to pan, add 1/2 cup red wine and 1/2 teaspoon dried oregano, and season with 1/4 teaspoon kosher salt and 1/4 teaspoon black pepper. Return to oven for 5 minutes until wine reduces slightly and coats the vegetables.
