Sheet Pan Sunrise Vegetable Medley

Ingredients
- 1 medium zucchini
- 1 medium yellow bell pepper
- 1 red onion
- 1 cup cherry tomatoes
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F (220°C) and line a large sheet pan with parchment paper.
- Step 2: Dice 1 medium zucchini and 1 medium yellow bell pepper into 1/2-inch cubes, then dice 1 red onion into 1/2-inch pieces. Halve 1 cup cherry tomatoes.
- Step 3: In a large bowl, combine all diced vegetables with 2 tbsp olive oil, 1 tsp dried oregano, 1/2 tsp salt, and 1/4 tsp black pepper. Toss until evenly coated.
- Step 4: Spread vegetables in a single layer on the prepared sheet pan. Roast for 25 minutes, stirring once halfway, until edges are golden and vegetables are tender-crisp.
