- 1 tbsp olive oil
- 4 cloves garlic
- 1 tbsp fresh thyme
- 1 cup chicken broth
Instructions
- Step 1: Pat chicken thighs dry and season with 1/2 tsp salt and 1/4 tsp black pepper. Heat 1 tbsp olive oil in a heavy skillet over medium-high heat until shimmering, then sear thighs for 3-4 minutes per side until golden brown.
- Step 2: Transfer chicken to a slow cooker, adding 4 minced garlic cloves, 1 tbsp fresh thyme, and 1 cup chicken broth. Stir to combine.
- Step 3: Cover and cook on LOW for 6-7 hours until chicken is tender and easily pulls from the bone.
