Instructions
- Step 1: Preheat oven to 325°F. Heat 3 tbsp olive oil in a large heavy ovenproof pot over medium-high heat. Season 4 lamb shanks with 1 1/2 tsp salt and 1 tsp black pepper, then brown them on all sides for 8-10 minutes until deeply golden. Remove shanks and set aside.
- Step 2: Add 1 large chopped yellow onion to the pot and sauté for 5 minutes until softened. Stir in 5 minced garlic cloves and cook for 1 minute until fragrant.
- Step 3: Pour in 1 cup dry white wine and bring to a simmer, scraping up browned bits from the bottom. Let the wine reduce by half, about 4 minutes.
- Step 4: Return the lamb shanks to the pot and add 2 cups chicken or beef broth, 1/4 cup fresh lemon juice, and 2 tbsp dried oregano. Cover the pot and transfer to the oven.
- Step 5: Braise the lamb shanks for 2 1/2 to 3 hours until the meat is tender and falling off the bone. Remove from oven, sprinkle with 2 tbsp chopped fresh parsley, and serve warm.
