Slow-Cooked Honey-Mustard Pork Shoulder with Apples

Ingredients
- 3 lb, trimmed of excess fat pork shoulder
- 1/4 cup honey
- 2 tbsp Dijon mustard
- 2 tbsp apple cider vinegar
- 1, finely chopped yellow onion
- 3 cloves, minced garlic
- 1 tsp dried thyme
- 2 cups diced apples
- 1/2 cup chicken broth
Instructions
- Step 1: Place 3 lb trimmed pork shoulder in the slow cooker. In a small bowl, whisk together 1/4 cup honey, 2 tbsp Dijon mustard, 2 tbsp apple cider vinegar, 3 minced garlic cloves, 1 tsp dried thyme, and 1/2 cup chicken broth until smooth.
- Step 2: Pour the honey-mustard mixture over the pork shoulder, then top with 1 finely chopped yellow onion and 2 cups diced apples.
- Step 3: Cover and cook on low for 8 hours or on high for 4 hours until the pork is tender enough to pull apart with a fork.
- Step 4: Remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the slow cooker and stir to coat with the sauce and apples. Cook for an additional 15 minutes on low to meld the flavors.
- Step 5: Serve the pork shoulder over rice or with crusty bread for a hearty meal.
