Slow Cooker Cumin-Lime Chicken with Black Beans

Ingredients
- 1 lb, skinless chicken thighs
- 1 can (15 oz), drained and rinsed black beans
- 1 cup chicken broth
- 2, juiced lime
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1 small, diced onion
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp cayenne pepper
Instructions
- Step 1: Heat 1 tbsp olive oil in a skillet over medium-high heat. Brown chicken thighs on both sides for 3-4 minutes per side, then transfer to slow cooker.
- Step 2: Add diced onion to skillet and cook for 2 minutes until softened. Stir in 1 tsp cumin, 1/2 tsp garlic powder, 1/4 tsp cayenne, and 1/2 tsp salt. Add 1 cup chicken broth and 2 tbsp lime juice, then pour mixture over chicken in slow cooker.
- Step 3: Stir in drained black beans. Cook on low for 6-7 hours until chicken is tender. Serve with rice or over greens.
