Smith's Slow-Roasted Pork Shoulder with Apple Cider Glaze

Instructions
- Step 1: Preheat oven to 325°F. Trim excess fat from pork shoulder and rub with 2 tbsp Dijon mustard, 1 tsp kosher salt, 1/2 tsp black pepper, and 2 minced garlic cloves.
- Step 2: Place pork in a roasting pan, nestling 1 tbsp chopped rosemary around it. Pour 1/2 cup apple cider into the pan, ensuring it pools around the meat but doesn't submerge it.
- Step 3: Cover pan tightly with foil and roast for 3 hours, until internal temperature reaches 195°F and meat pulls apart easily with a fork. Remove foil for the last 20 minutes to crisp the surface.
