Smoky Black and White Bean Stew

- 1 cup dried black beans
- 1 cup dried white beans (cannellini)
- 1 large, diced onion
- 2 stalks, diced celery
- 2, diced carrot
- 3 cloves, minced garlic
- 2 tsp smoked paprika
- 1 bay leaf
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1/4 cup, chopped fresh parsley
Instructions
- Step 1: Heat 1 tbsp olive oil in a large pot over medium heat. Add 1 diced onion, 2 diced celery stalks, and 2 diced carrots; cook for 5 minutes until softened and golden around the edges.
- Step 2: Stir in 3 minced garlic cloves and 2 tsp smoked paprika, cooking for 1 minute until fragrant without browning.
- Step 3: Add 1 cup rinsed black beans, 1 cup rinsed white beans, 1 bay leaf, and 4 cups vegetable broth; bring to a simmer and cook uncovered for 90 minutes, stirring occasionally, until beans are tender.
- Step 4: Discard the bay leaf and season with salt and black pepper to taste. Stir in 1/4 cup chopped fresh parsley before serving.
