Soy-Ginger Stir-Fried Vegetables
A quick and aromatic stir-fry with crisp vegetables coated in a savory soy-ginger sauce, finished with sesame oil.

Ingredients
- 2 tbsp vegetable oil
- 2 cups (broccoli, bell peppers, snap peas), cut into 1-inch pieces mixed vegetables
- 3 cloves, minced garlic
- 1 tbsp, minced fresh ginger
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 tbsp sesame oil
- 1/2 tsp cornstarch
Instructions
- Step 1: Heat 2 tbsp vegetable oil in a large skillet over high heat until shimmering.
- Step 2: Add 2 cups mixed vegetables and stir-fry for 3-4 minutes until crisp-tender. Remove and set aside.
- Step 3: Add 3 minced garlic cloves and 1 tbsp minced ginger to the skillet. Stir for 30 seconds until fragrant.
- Step 4: Whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sugar, 1/4 cup water, and 1/2 tsp cornstarch. Pour into skillet and bring to a simmer, cooking for 1 minute until thickened.
- Step 5: Return vegetables to skillet and toss to coat. Cook for 1 minute, then drizzle with 1 tbsp sesame oil before serving.
