Spiced Chicken Jollof Rice
One-pot chicken and rice simmered in a tomato-pepper sauce with aromatic spices.

Ingredients
- 1 lb Chicken thighs
- 1, finely chopped Onion
- 2, chopped Tomato
- 1, chopped Bell pepper
- 1 tsp Thyme
- 1 tsp Curry powder
- 1 cup Chicken broth
- 1 cup Long-grain rice
- 2 tbsp Vegetable oil
- 1 tsp Salt
- 1/2 tsp Black pepper
Instructions
- Step 1: Heat 2 tbsp vegetable oil in a large pot over medium-high heat.
- Step 2: Add 1 lb bone-in, skin-on chicken thighs and cook until golden brown on both sides (5-7 minutes).
- Step 3: Add 1 finely chopped onion, 2 chopped tomatoes, and 1 chopped bell pepper. Cook, stirring occasionally, until vegetables soften and tomatoes break down (8 minutes).
- Step 4: Stir in 1 tsp thyme, 1 tsp curry powder, 1 cup chicken broth, 1 tsp salt, and 1/2 tsp black pepper.
- Step 5: Bring to a simmer, then add 1 cup long-grain rice and stir to combine.
- Step 6: Reduce heat to low, cover, and simmer for 25-30 minutes until rice is tender and liquid absorbed.
- Step 7: Remove chicken, let rest 5 minutes, then discard skin and bones, and slice meat.
- Step 8: Serve rice with chicken pieces.
