Stir-Fried Tofu with Seasonal Vegetables and Sesame

Ingredients
- 14 oz block, pressed and cubed firm tofu
- 2 tbsp vegetable oil
- 1 medium, sliced onion
- 1, sliced bell pepper
- 2 cups, florets broccoli
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp cornstarch
- 1/4 cup water
- 1 tbsp sesame seeds
Instructions
- Step 1: In a small bowl, whisk 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sesame oil, 1/2 tsp cornstarch, and 1/4 cup water to create a sauce.
- Step 2: Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the cubed tofu and cook for 5 minutes until golden on all sides, turning occasionally.
- Step 3: Push tofu to one side of the skillet. Add the sliced onion, bell pepper, and broccoli florets, then stir-fry for 5 minutes until vegetables are crisp-tender.
- Step 4: Pour the sauce mixture over tofu and vegetables, stirring constantly. Cook for 2-3 minutes until sauce thickens and coats ingredients evenly.
- Step 5: Transfer to a serving dish and sprinkle with 1 tbsp sesame seeds.
