Sun-Dried Tomato and Herb Pasta

Ingredients
- 12 ounces Spaghetti
- 1/2 cup, oil-packed and chopped Sun-dried tomatoes
- 3 cloves, minced Garlic
- 1/4 cup, chopped Fresh basil
- 2 tablespoons, chopped Fresh parsley
- 3 tablespoons Olive oil
- 1 teaspoon Lemon zest
- 1/4 teaspoon Red pepper flakes
- 1 teaspoon Salt
- 1/2 cup Pasta water
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 12 ounces spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 3 tablespoons olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and cook for 1 minute until fragrant, being careful not to brown.
- Step 3: Stir in 1/2 cup chopped sun-dried tomatoes, 1 teaspoon lemon zest, and 1/4 teaspoon red pepper flakes, cooking for 2 minutes until tomatoes are warmed.
- Step 4: Add 1/4 cup chopped fresh basil and 2 tablespoons chopped fresh parsley to the skillet, stirring to combine.
- Step 5: Add the drained spaghetti to the skillet and toss to coat, adding 1/2 cup reserved pasta water to create a light sauce, cooking for 1-2 minutes until sauce thickens slightly.
- Step 6: Season with 1 teaspoon salt and additional red pepper flakes to taste, then serve immediately.
