  1. Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz spaghetti and cook for 8-10 minutes until al dente, then drain, reserving 1/2 cup pasta water.
  2. Step 2: While pasta cooks, heat 2 tbsp olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing for 1 minute until fragrant but not browned.
  3. Step 3: Add 1/4 cup chopped sun-dried tomatoes to the skillet and cook for 2 minutes until heated through and oil is fragrant.
  4. Step 4: Add the drained spaghetti to the skillet, along with 1/2 cup reserved pasta water and 2 cups fresh spinach. Toss for 2-3 minutes until spinach wilts and sauce coats pasta.
  5. Step 5: Season with salt and pepper to taste, then stir in 1/2 cup grated Parmesan cheese until melted and combined.
