Sun-Dried Tomato and Spinach Pasta with Garlic

Ingredients
- 8 oz spaghetti
- 2 tbsp olive oil
- 3 cloves, minced garlic
- 1/4 cup, oil-packed, drained and chopped sun-dried tomatoes
- 2 cups spinach
- 1/4 tsp red pepper flakes
- to taste salt
- to taste pepper
- 1/2 cup, grated Parmesan cheese
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz spaghetti and cook for 8-10 minutes until al dente, then drain, reserving 1/2 cup pasta water.
- Step 2: While pasta cooks, heat 2 tbsp olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing for 1 minute until fragrant but not browned.
- Step 3: Add 1/4 cup chopped sun-dried tomatoes to the skillet and cook for 2 minutes until heated through and oil is fragrant.
- Step 4: Add the drained spaghetti to the skillet, along with 1/2 cup reserved pasta water and 2 cups fresh spinach. Toss for 2-3 minutes until spinach wilts and sauce coats pasta.
- Step 5: Season with salt and pepper to taste, then stir in 1/2 cup grated Parmesan cheese until melted and combined.
