Sun-Dried Tomato and Spinach Pasta with Garlic and Lemon

Ingredients
- 12 oz spaghetti
- 3 tbsp olive oil
- 4 cloves, minced garlic
- 1/4 cup, oil-packed, chopped sun-dried tomatoes
- 2 cups, fresh spinach
- 1/2 cup, grated Parmesan cheese
- 1, juiced lemon

Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 12 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and 1/4 cup chopped sun-dried tomatoes, sautéing for 2 minutes until fragrant and garlic is golden.
- Step 3: Add 2 cups fresh spinach to the skillet and cook for 1 minute until wilted and bright green.
- Step 4: Add the drained spaghetti to the skillet along with 1/4 cup reserved pasta water and 1/2 cup grated Parmesan cheese. Toss vigorously for 1 minute until the cheese melts into a creamy sauce that coats every strand.
- Step 5: Stir in the juice of half a lemon and season with salt and pepper to taste until the sauce feels rich and balanced.
