Tomato-Basil and Roasted Pepper Pasta

  1. Step 1: Bring a large pot of salted water to a rolling boil. Add spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
  2. Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant. Add diced tomatoes and roasted red pepper, and cook for 5 minutes until tomatoes break down.
  3. Step 3: Stir in fresh basil, parsley, salt, and pepper. Add drained pasta to the skillet and toss to coat, adding reserved pasta water as needed to create a light sauce. Sprinkle with Parmesan cheese and toss again until evenly distributed.
