Tomato-Basil and Roasted Pepper Pasta
Al dente pasta tossed in a bright tomato-basil sauce with roasted peppers for a simple, flavorful weeknight dinner.

Ingredients
- 12 oz spaghetti
- 2 medium, diced tomatoes
- 1, roasted and diced red bell pepper
- 3 tbsp olive oil
- 2 cloves, minced garlic
- 1/4 cup fresh, chopped basil
- 1/4 cup fresh, chopped parsley
- to taste salt
- to taste black pepper
- 1/2 cup, grated Parmesan cheese
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add garlic and sauté for 1 minute until fragrant. Add diced tomatoes and roasted red pepper, and cook for 5 minutes until tomatoes break down.
- Step 3: Stir in fresh basil, parsley, salt, and pepper. Add drained pasta to the skillet and toss to coat, adding reserved pasta water as needed to create a light sauce. Sprinkle with Parmesan cheese and toss again until evenly distributed.
