Tomato-Basil Pasta with Roasted Cherry Tomatoes

Ingredients
- 8 oz spaghetti
- 1 cup, halved cherry tomatoes
- 2 tbsp olive oil
- 4 cloves, minced garlic
- 1/2 cup, chopped fresh basil
- 1/4 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 cup pasta water
Instructions
- Step 1: Preheat oven to 425°F. Toss 1 cup halved cherry tomatoes with 1 tbsp olive oil, 1/4 tsp salt, and 1/4 tsp black pepper on a baking sheet.
- Step 2: Roast tomatoes for 15 minutes until blistered.
- Step 3: Bring a large pot of salted water to boil. Add 8 oz spaghetti and cook for 8-10 minutes until al dente.
- Step 4: While pasta cooks, heat 1 tbsp olive oil in a skillet over medium heat. Add 4 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing for 1 minute until fragrant.
- Step 5: Add roasted tomatoes, 1/2 cup chopped basil, and 1/4 cup reserved pasta water to skillet. Toss with drained spaghetti until coated, adding more pasta water if needed to emulsify.
