Tossed Basil and Garlic Spaghetti with Pecorino

- 12 oz spaghetti
- 3 tbsp olive oil
- 4 cloves, minced garlic
- 1/4 tsp red pepper flakes
- 1/4 cup, chopped fresh basil
- 1/2 cup, grated pecorino cheese
- 1/2 cup, reserved pasta water
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 12 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 3 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing for 30 seconds until fragrant — do not let garlic brown.
- Step 3: Add drained spaghetti to skillet with 1/2 cup reserved pasta water and 1/2 cup grated pecorino cheese. Toss vigorously for 1 minute until cheese melts into a creamy sauce that coats every strand.
- Step 4: Stir in 1/4 cup chopped fresh basil and serve immediately.
