Venison and Wild Mushroom Stew

  1. Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 diced medium onion and cook for 5 minutes until softened.
  2. Step 2: Stir in 3 minced garlic cloves and cook for 1 minute until fragrant.
  3. Step 3: Add 1 lb ground venison and cook, breaking it up with a spoon, for 5 minutes until browned.
  4. Step 4: Stir in 2 tbsp tomato paste and cook for 1 minute, then add 3 cups beef broth, 2 cups sliced cremini mushrooms, 1 tsp dried thyme, 1 tsp salt, and 1/2 tsp black pepper.
  5. Step 5: Bring to a simmer, then reduce heat to low. Cover and simmer for 30 minutes until flavors meld.
  6. Step 6: Stir in 1/2 cup red wine and simmer for 10 more minutes until the stew is rich and thickened.
