Venison and Wild Mushroom Stew

Ingredients
- 1 lb ground venison
- 2 cups, sliced cremini mushrooms
- 1 medium, diced onion
- 3 cloves, minced garlic
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup red wine
Instructions
- Step 1: Heat 2 tbsp olive oil in a large pot over medium heat. Add 1 diced medium onion and cook for 5 minutes until softened.
- Step 2: Stir in 3 minced garlic cloves and cook for 1 minute until fragrant.
- Step 3: Add 1 lb ground venison and cook, breaking it up with a spoon, for 5 minutes until browned.
- Step 4: Stir in 2 tbsp tomato paste and cook for 1 minute, then add 3 cups beef broth, 2 cups sliced cremini mushrooms, 1 tsp dried thyme, 1 tsp salt, and 1/2 tsp black pepper.
- Step 5: Bring to a simmer, then reduce heat to low. Cover and simmer for 30 minutes until flavors meld.
- Step 6: Stir in 1/2 cup red wine and simmer for 10 more minutes until the stew is rich and thickened.
