  1. Step 1: Rinse lentils under cold water until water runs clear, then add to a pot with 4 cups water, turmeric, and salt. Bring to a rolling boil, reduce heat to low, and simmer uncovered for 25-30 minutes until lentils are tender and water has reduced slightly.
  2. Step 2: While lentils simmer, heat neutral oil in a small skillet over medium heat. Add mustard seeds and cook for 1 minute until they begin to pop. Add onion, ginger, and garlic, and sauté for 5 minutes until onions are translucent and golden.
  3. Step 3: Stir cooked onion mixture into lentils, add cumin, and simmer for 5 more minutes. Stir in cilantro just before serving. The dal should have a thick, spoonable consistency.
