Yellow Dal Tadka with Mustard Seeds

Ingredients
- 1 cup split yellow lentils
- 4 cups water
- 1 medium, finely diced onion
- 1 tablespoon minced ginger
- 1 teaspoon minced garlic
- 1 teaspoon ground cumin
- 1/4 teaspoon turmeric
- 1/2 teaspoon mustard seeds
- 1 tablespoon neutral oil
- 2 tablespoons chopped fresh cilantro
- 1/2 teaspoon salt
Instructions
- Step 1: Rinse lentils under cold water until water runs clear, then add to a pot with 4 cups water, turmeric, and salt. Bring to a rolling boil, reduce heat to low, and simmer uncovered for 25-30 minutes until lentils are tender and water has reduced slightly.
- Step 2: While lentils simmer, heat neutral oil in a small skillet over medium heat. Add mustard seeds and cook for 1 minute until they begin to pop. Add onion, ginger, and garlic, and sauté for 5 minutes until onions are translucent and golden.
- Step 3: Stir cooked onion mixture into lentils, add cumin, and simmer for 5 more minutes. Stir in cilantro just before serving. The dal should have a thick, spoonable consistency.
