Zucchini-Infused Ground Beef Taco Filling

Ingredients
- 12 oz Ground beef
- 1 cup, finely grated Zucchini
- 1 tsp Cumin
- 1/2 tsp Chili powder
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 2 tbsp Coconut aminos
- 1 tbsp Avocado oil
- 2 tbsp, chopped Fresh cilantro
Instructions
- Step 1: Heat 1 tbsp avocado oil in a skillet over medium-high heat. Add 12 oz ground beef and cook for 5 minutes, breaking into small pieces, until browned. Drain excess fat.
- Step 2: Add 1 cup finely grated zucchini to the skillet and cook for 3-4 minutes, stirring occasionally, until zucchini releases moisture and mixture thickens.
- Step 3: Stir in 1 tsp cumin, 1/2 tsp chili powder, 1/2 tsp garlic powder, 1/2 tsp onion powder, and 2 tbsp coconut aminos. Cook for 2 minutes until spices are fragrant, then remove from heat and sprinkle with 2 tbsp chopped fresh cilantro.
