Adverb-Infused Roasted Vegetable Medley

Ingredients
- 2 medium sweet potatoes
- 2 medium zucchini
- 1 red bell pepper
- 1/2 red onion
- 4 cloves garlic
- 2 tbsp dill
- 3 tbsp olive oil
- 1 tsp dijon mustard
- 3/4 tsp sea salt
- 1/2 tsp black pepper
Instructions
- Step 1: Preheat oven to 425°F (220°C). Peel and dice 2 medium sweet potatoes into 3/4-inch cubes. Slice 2 medium zucchini and 1 red bell pepper into 1/2-inch pieces, and finely chop 1/2 red onion.
- Step 2: In a large bowl, toss all vegetables with 3 tbsp olive oil, 4 minced garlic cloves, 1 tsp dijon mustard, 3/4 tsp sea salt, and 1/2 tsp black pepper. Spread evenly on a parchment-lined sheet pan.
- Step 3: Roast for 25 minutes, stirring halfway, until vegetables are golden at the edges and tender when pierced with a fork.
- Step 4: Remove from oven, sprinkle with 2 tbsp fresh dill, and toss gently. Let rest for 5 minutes before serving to allow flavors to settle.
