  1. Step 1: Preheat oven to 400°F (200°C). Toss 2 cups cherry tomatoes with 1 tbsp olive oil, 1/2 cup chopped onion, and 2 minced garlic cloves. Spread on a baking sheet and roast for 20 minutes until tomatoes are softened and slightly charred.
  2. Step 2: Transfer the roasted mixture to a blender, add 1.5 cups vegetable broth, and blend until smooth. Return to a pot and heat over medium-low for 5 minutes.
  3. Step 3: Stir in 1/4 cup heavy cream and 3 tbsp chopped fresh chives. Simmer gently for 3 minutes without boiling. Taste and adjust seasoning with salt and pepper.
